Obituary of Judith E. Mendez

Judith E. Mendez, 78, of Ocala, Florida passed away at her home surrounded by family on April 30, 2022. She was born July 8, 1943, the daughter of the late Julian and Jennie (Jankausky) Skubis. Judy was a native of Chicago, Illinois, before moving to Ocala in 2019. In 1963, she married her loving husband, Joseph, and together the two shared many years of love and happiness. Judy was a dedicated Catholic. In her free time, she enjoyed listening to classic music, crocheting, bowling, and gathering with family members and friends. Judy also loved shopping and pampering herself with her nails and hair. She was the co-owner of Pepe’s Tortillas in Blue Island, Illinois prior to her retirement to Florida where she purchased real estate where she proudly allowed her son and daughter-in-law to run La Hacienda in Ocala. 

Judith is survived by her husband, Joseph Mendez; her children, Susan (Dave) Mendez and Steven (Reina) Mendez; her grandchildren, Mark Mendez, Robert Mendez, Adrian Mendez, Julian Mendez, Mia Mendez, and Gabriella Samantha Mendez; great-grandchildren, Kylie Mendez, Mark Mendez, and Dominic Mendez; and her brother, Leroy Skubis.

She was preceded in death by her parents.

A funeral mass for Judy will be held at St. Jude Catholic Church (443 Marion Oaks Dr, Ocala, FL 34473) on Thursday, May 5 at 10:00am. Burial will follow at Good Shepherd Memorial Gardens. Visitation will take place at Hiers-Baxley Funeral Services (910 E Silver Springs Blvd., Ocala, FL 34470) on Wednesday, May 4 from 6:00pm until 8:00pm.
